Pudina Rice (Mint Rice)


Rice is staple food from southern part of India. Just that sometimes boredom sets in they cam up with varieties of rice like Lemon Rice, Tamarind Rice, Tomato Rice and Pudina Rice (there are many more varieties).

This recipe is one of the simplest recipe you can make this in about 10 min if you have all the ingredients ready.

You can also opt for this recipe if you have some leftover rice. 




Ingredients

  • Mint Leaves (one bunch for 4 persons preparation)
  • Cooked Rice
  • Green Chillies (optional)
  • Cumin seeds
  • Ginger (a Small piece)
  • Garlic (optional)
  • Carrots 
  • Peas
  • Mustard seeds
  • Oil
  • Cinnamon stick
  • Bay leaf 
  • Salt
  • Turmeric

Grind Mint leaves with green chilies, Cumin seeds, ginger and garlic. make it into a paste, add little water if required.

In a pan add oil, once the oil is hot add bay leaves cinnamon stick and mustard seeds. once the mustard seeds crackle, add the diced vegetables with salt and turmeric. Cook the vegetable for 2 min and then add the mint sauce. cook the mint sauce for 10 min till you see oil in the sides of pan (this means that your sauce is cooked).

Once the sauce is ready, you can add cooked rice into this and mix it with the rice softly. Take care not to mash up the rice.

Garnish with fresh coriander leaves.

Tip:

  • You can add Cauliflower or potatoes as well. you can also add Cashew nuts and Raisins to make it look more rich.
  • You can also use this food in travel as it has no curry or gravy and it can stay fresh for long.
